{"id":1694,"date":"2012-02-03T20:43:19","date_gmt":"2012-02-04T02:43:19","guid":{"rendered":"http:\/\/cottrillcompass.com\/blog\/?p=1694"},"modified":"2012-02-03T20:43:19","modified_gmt":"2012-02-04T02:43:19","slug":"ixtapaluca-monument-and-a-taco-stand","status":"publish","type":"post","link":"https:\/\/cottrillcompass.com\/blog\/2012\/ixtapaluca-monument-and-a-taco-stand.html","title":{"rendered":"Ixtapaluca Monument (and a taco stand)"},"content":{"rendered":"<p><b>This metal monument has become a somewhat of a symbol of Ixtapaluca. &nbsp;But what is it?<\/b><\/p>\n<p>After asking a few people &#8211; who weren&#8217;t sure &#8211; I finally went to see if there was some kind of plaque explaining what it&#8217;s all about. &nbsp;But alas &#8211; the mystery remains. &nbsp;No plaque.<\/p>\n<p>But I&#8217;m hoping that someone will read this and finally explain it to me!<\/p>\n<p><b>Today this taco stand that you see was set up by the monument.<\/b> &nbsp;Apparently their specialties are <i>tacos de cabeza<\/i> (head tacos (usually cow, sometimes sheep) &#8211; muscles of the head or other parts such as the brains (<i>sesos<\/i>) or lips (<i>trompa<\/i>) or cheeks (<i>cachete<\/i>) or tongue (<i>lengua<\/i>)) and <i>tacos de burria<\/i> (specially spiced tacos often of goat or mutton). &nbsp;They also serve mixed tacos (<i>surtida<\/i>), which, I believe, include various parts of the pig. &nbsp;Maybe you don&#8217;t want to know.<\/p>\n<p><center><a href=\"https:\/\/cottrillcompass.com\/gallery2\/f\/ixtapaluca-monument\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/cottrillcompass.com\/images\/ixtapaluca-monument.jpg\" width=\"400\" height=\"600\" border=\"0\" alt=\"Ixtapaluca Monument\" \/><\/a><\/center><\/p>\n<p>Click on the image to see higher resolution versions.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This metal monument has become a somewhat of a symbol of Ixtapaluca. &nbsp;But what is it?
